Mexican Black Bean and Corn Salad

  • 2 cups black beans cooked or canned, rinsed & drained if canned
  • 2 cups corn, fresh cut or canned
  • 2 cups tomatoes chopped, fresh or canned
  • 1/4 cup red or yellow onion chopped
  • 1/4 cup fresh cilantro chopped or 2 tablespoons dried cilantro

Mix ingredients together and then add the following to complete the salad.

  • Juice of 1 lime
  • 2 tablespoons of olive oil
  • 1 teaspoon cumin
  • 1/8 teaspoon of cayenne pepper
  • salt and pepper to taste

Mix all ingredients together, chill for 1 hour or more.
6 servings, 3/4 cup each serving.
